 Grilled Corn Provençal

Classic Provençal flavours of garlic, tomatoes and olive oil accentuate sweet and tender grilled corn.
 
Butter, softened1/4 cup60 mL
Finely chopped onion1/4 cup60 mL
Finely chopped sun-dried tomatoes2 tbsp.30 mL
in oil, blotted dry
Finely chopped fresh basil2 tsp.10 mL
Finely chopped fresh parsley2 tsp.10 mL
Finely chopped fresh thyme2 tsp.10 mL
White wine vinegar2 tsp.10 mL
Garlic cloves, minced22
(or 1/2 tsp., 2 mL, powder)
Salt1/2 tsp.2 mL
Pepper1/2 tsp.2 mL
Fennel seed, crushed1/4 tsp.1 mL
Dried crushed chilies1/4 tsp.1 mL

Medium corncobs, in husks44
 
Beat first 12 ingredients in medium bowl until combined.


Pull husks down to end of cobs, leaving husks attached. Remove and discard silk. Spread butter mixture over corn. Bring husks back up to cover corn. Tie ends together with butcher’s string. Preheat barbecue to medium. Place cobs on ungreased grill. Close lid. Cook for about 30 minutes, turning often, until tender. Let stand until cool enough to handle. Remove and discard husks. Makes 4 cobs.
