Autumn Pumpkin Soup

The perfect blend of pumpkin and spices! This thick pumpkin and apple soup is just what you need on a chilly fall day. Serve with slices of whole-wheat bread.
 
Olive (or canola) oil2 tsp.10 mL
Chopped onion1 1/2 cups375 mL
 
Low-sodium prepared chicken 4 cups1 L
(or vegetable) broth
Can of pure pumpkin (no spices)14 oz.398 mL
Unsweetened applesauce1 cup250 mL
Bay leaf11
Chopped fresh thyme2 tsp.10 mL
(or 1/2 tsp., 2 mL, dried)
Lemon pepper1 tsp.5 mL
Salt, sprinkle
 
Heat olive oil in large saucepan on medium. Add onion. Cook for 5 to 10 minutes, stirring occasionally, until softened and starting to brown.

Add remaining 7 ingredients. Stir. Bring to a boil. Reduce heat to medium-low. Simmer, partially covered, for 10 minutes to blend flavours. Discard bay leaf. Makes about 7 cups (1.75 L).
