Heat olive oil in large saucepan on medium. Add onion. Cook for 5 to 10 minutes, stirring occasionally, until softened and starting to brown. Add remaining 7 ingredients. Stir. Bring to a boil. Reduce heat to medium-low. Simmer, partially covered, for 10 minutes to blend flavours. Discard bay leaf. Makes about 7 cups (1.75 L). |
