Balsamic Beans

Complementary colours of red and green make this dish appealing to the eye. Complementary flavours of beans and balsamic vinegar make this dish appealing to the palate.
 
Frozen cut green beans5 cups1.25 L
 
Olive oil1 tbsp.15 mL
Thinly sliced red onion1/4 cup60 mL
Garlic clove, minced (or 1/4 tsp., 11
1 mL, powder)
 
Can of diced tomatoes, drained14 oz.398 mL
Balsamic vinegar3 tbsp.50 mL
Parsley flakes1 tsp.5 mL
Dried basil1/2 tsp.2 mL
 
Cook beans in boiling salted water in large partially covered saucepan for about 6 minutes, stirring occasionally, until tender but firm. Drain. Return to same pot. Cover to keep warm.

Meanwhile, heat olive oil in medium frying pan on medium. Add onion and garlic. Cook for about 5 minutes until onion is softened.

Add remaining 4 ingredients. Heat and stir for 2 minutes to blend flavours. Add to beans. Toss. Serves 4.
