Berry Filling: Combine first 4 ingredients in medium bowl. Makes about 3/4 cup (175 mL) filling. Spread 1 tsp. (5 mL) filling on bottom of 1/2 of wafers. Place remaining 1/2 of wafers on top of filling. Chill for about 1 hour until filling is firm. Heat semi-sweet chocolate and margarine in small heavy saucepan on lowest heat, stirring often until chocolate is almost melted. Do not overheat. Remove from heat. Stir until smooth. Place 1 cookie on top of fork. Dip into chocolate mixture until completely coated, allowing excess to drip back into pan. Place on waxed paper-lined cookie sheet. Repeat with remaining cookies and chocolate mixture. Let stand until set. May be chilled to speed setting. Heat white chocolate in separate small heavy saucepan on lowest heat, stirring often until almost melted. Do not overheat. Remove from heat. Stir until smooth. Spoon into paper cone, or into small resealable freezer bag with tiny piece snipped off corner. Drizzle chocolate in decorative pattern over each dipped cookie. Let stand until set. Makes 3 dozen (36) cookies. |
