Black Russian Pie

Totally decadent. Oh so smooth.
 
Chocolate Graham Crust:
Butter or hard margarine1/3 cup75 mL
Graham cracker crumbs1 1/4 cups300 mL
Granulated sugar3 tbsp.50 mL
Cocoa2 tbsp.30 mL
 
Filling:
Large marshmallows2424
Milk1/2 cup125 mL
Salt1/4 tsp.1 mL
 
Kahlua liqueur1/3 cup75 mL
 
Whipping cream (or 1 envelope1 cup250 mL
topping)
 
Reserved crumb mixture
Chocolate-covered coffee beans,
for garnish
 
Chocolate Graham Crust: Melt butter in saucepan. Stir in graham crumbs, sugar and cocoa. Reserve 1/3 cup (75 mL). Press remainder in bottom and sides of 9 inch (22 cm) pie plate. Bake in 350°F (175°C) oven for 10 minutes. Cool.

Filling: Put marshmallows, milk and salt in large saucepan. Heat, stirring often, until melted and smooth. Chill until it mounds. Stir in Kahlua.

Beat cream in small bowl until stiff. Fold into marshmallow mixture. Turn into cooled pie shell.

Garnish with reserved crumb mixture and coffee beans. Makes 1 pie.
