Brown Betty

An all-time favourite. Good hot or cold. Even better served with ice cream.
 
Peeled, cored and sliced cooking apples 6 cups1.5 L
(such as McIntosh)
Granulated sugar3/4 cup175 mL
 
STREUSEL TOPPING
All-purpose flour1 1/4 cups300 mL
Brown sugar, packed3/4 cup175 mL
Salt1/2 tsp.2 mL
Hard margarine (or butter), cut up1/2 cup125 mL
 
Place apple slices in ungreased shallow 3 quart (3 L) casserole. Sprinkle sugar over top.

Streusel Topping: Combine flour, brown sugar and salt in medium bowl. Cut in margarine until mixture resembles coarse crumbs. Scatter evenly over apple. Press down lightly. Bake, uncovered, in 375°F (190°C) oven for about 40 minutes until apple is tender. Serves 8.

Rhubarb Betty: Omit apple and use same amount of sliced fresh or frozen rhubarb, adding 1/2 cup (125 mL) more sugar. Better yet, add a few raisins and omit the extra sugar. Bake as directed.

Fresh Fruit Betty: Omit apple and use fresh peaches, peeled and sliced, or fresh apricots, quartered. Bake as directed.
