Brown Sugar Cookies

An old-fashioned cookie taste. Not too sweet, with little bits of almond crunch.
 
Hard margarine (or butter),1 cup250 mL
softened
Brown sugar, packed1 1/3 cups325 mL
Large eggs22
Vanilla1/2 tsp.2 mL
 
All-purpose flour3 1/4 cups810 mL
Baking soda1 1/4 tsp.6 mL
Ground cinnamon3/4 tsp.4 mL
Salt1/4 tsp.1 mL
Chopped almonds1/3 cup75 mL
 
Cream margarine and brown sugar together in large bowl. Beat in eggs, 1 at a time. Add vanilla. Mix.

Stir in remaining 5 ingredients. Form into 2 rolls, 2 inches (5 cm) in diameter. Cover. Refrigerate overnight. Slice 1/4 inch (6 mm) thick. Arrange on ungreased cookie sheet. Bake in 375°F (190°C) oven for 10 to 12 minutes until browned. Makes 3 1/2 dozen cookies.
