Brownies

Not only is this the easiest and fastest baked brownie to make, it’s also one of the best tasting.
 
Butter (or hard margarine)1/2 cup125 mL
Cocoa, sifted if lumpy1/4 cup60 mL
 
Large eggs22
Granulated sugar1 cup250 mL
All-purpose flour3/4 cup175 mL
Chopped walnuts1/2 cup125 mL
Salt1/8 tsp.0.5 mL
 
ICING
Icing (confectioner’s) sugar1 1/3 cups325 mL
Cocoa, sifted if lumpy1/3 cup75 mL
Butter (or hard margarine), softened3 tbsp.50 mL
Hot strong prepared coffee1 1/2 tbsp.25 mL
 
Heat butter and cocoa in small, heavy saucepan on low, stirring occasionally, until smooth.

Beat eggs in medium bowl until frothy. Add next 4 ingredients and cocoa mixture. Stir well. Spread evenly in greased 8 x 8 inch (20 x 20 cm) pan. Bake in 350°F (175°C) oven for 25 to 30 minutes, until edges show signs of pulling away from sides of pan and wooden pick inserted in centre comes out moist but not wet with batter. Do not overbake. Cool slightly.

Icing: Beat all 4 ingredients in medium bowl until smooth, adding more coffee or icing sugar as necessary until spreading consistency. Spread evenly over warm brownie layer. Cuts into 25 squares.
