Cherry Nut Bars

Sometimes called an Oh Henry Bar, this square is a chock-full layer of nuts and cherries smothered by rich pink icing.
 
Whole graham crackers12 – 13 12 – 13
 
Brown sugar, packed1 cup250 mL
Butter (or hard margarine)1/2 cup125 mL
Milk1/2 cup125 mL
 
Graham cracker crumbs1 1/3 cups325 mL
Chopped walnuts1 cup250 mL
Medium unsweetened coconut 1 cup250 mL
Chopped maraschino cherries, 1/4 cup60 mL
well drained
 
ICING
Icing (confectioner’s) sugar1 1/2 cups375 mL
Butter (or hard margarine), softened3 tbsp.50 mL
Milk1 1/2 tbsp.25 mL
Vanilla extract1/2 tsp.2 mL
Drop of red liquid food colouring11
 
Line ungreased 9 x 9 inch (22 x 22 cm) pan with graham crackers, cutting to fit. Set aside.

Combine next 3 ingredients in small, heavy saucepan. Bring to a boil on medium, stirring occasionally. Reduce heat to medium-low. Simmer for 2 minutes. Remove from heat.

Add next 4 ingredients. Stir well. Spread evenly over crackers in pan. Cool.

Icing: Beat all 5 ingredients in medium bowl until smooth, adding more milk or icing sugar as necessary until spreading consistency. Spread evenly over bottom layer. Let stand, covered, for at least 6 hours or overnight until crackers are softened. Cuts into 36 squares.
