Chicken Bacon Burgers

Place 1 chicken breast half between 2 sheets of waxed paper. Pound with meat mallet to about 1/2 inch (12 mm) thickness. Repeat with remaining chicken breast halves. Sprinkle both sides of each with salt and pepper. Heat cooking oil in large frying pan on medium. Add chicken. Cook for 8 to 10 minutes per side until no longer pink inside. Combine chutney and salad dressing in small cup. Spread on both halves of each roll. Arrange spinach leaves on top of chutney mixture on bottom half of each roll. Set aside. Put 1 cheese slice and 1 tomato slice on top of each chicken breast half in pan. Reduce heat to low. Cover. Cook for 2 to 3 minutes until cheese is melted. Heat precooked bacon according to package directions until crisp. Place 1 chicken breast half on top of spinach on each roll. Top with 2 bacon slices. Cover with top halves of rolls. Makes 4 burgers. |
