Chocolate Peanut Cookies

Peanut, peanut butter! Our take on classic peanut butter cookies uses applesauce, banana and, the piéce de résistance, chocolate!
 
Butter (or hard margarine), softened1/4 cup60 mL
Brown sugar, packed2/3 cup150 mL
Peanut butter1/2 cup125 mL
Large eggs22
Mashed overripe banana1/2 cup125 mL
Unsweetened applesauce1/3 cup75 mL
Vanilla extract1 tsp.5 mL
 
Large flake rolled oats1 cup250 mL
All-purpose flour2/3 cup150 mL
Whole wheat flour2/3 cup150 mL
Cocoa, sifted if lumpy1/2 cup125 mL
Baking soda1/2 tsp.2 mL
Salt1/2 tsp.2 mL
 
Mini semi-sweet chocolate chips 1/2 cup125 mL
Chopped salted peanuts1/3 cup75 mL
 
Cream first 3 ingredients in large bowl. Add next 4 ingredients. Beat well.

Combine next 6 ingredients in medium bowl. Add to butter mixture in 2 additions, mixing well after each addition until no dry flour remains.

Add chocolate chips and peanuts. Mix well. Roll dough into 1 1/2 inch (3.8 cm) balls. Arrange balls about 2 inches (5 cm) apart on greased cookie sheets. Bake in 350°F (175°C) oven for 8 to 10 minutes until firm and golden. Let stand on cookie sheets for 5 minutes. Remove cookies from cookie sheets and place on wire racks to cool. Makes about 40 cookies.
