Crab-Stuffed Zucchini

What to do with a bountiful harvest? Stuff it with an elegant crab filling. Garlic and dill add the perfect accent.
 
Medium zucchini, halved lengthwise33
 
Hard margarine (or butter)2 tbsp.30 mL
Finely chopped onion1/2 cup125 mL
Garlic cloves, minced (or 1/2 tsp., 2 mL,22
powder)
 
Can of crabmeat, drained, cartilage6 oz.170 g
removed, flaked
Grated Swiss cheese 1/2 cup125 mL
Crumbled feta cheese (about 1 1/2 oz.,1/3 cup75 mL
43 g)
 
Large egg, fork-beaten11
All-purpose flour1 tbsp.15 mL
Chopped fresh parsley (or 3/4 tsp., 4 mL,1 tbsp.15 mL
flakes)
Chopped fresh dill (or 1/2 tsp., 2 mL,2 tsp.10 mL
dill weed)
Paprika1 tsp.5 mL
Pepper1/4 tsp.1 mL
 
Scoop out pulp from each zucchini half, leaving 1/2 inch (12 mm) thick shells. Arrange shells in single layer on greased baking sheet. Chop pulp.

Melt margarine in small frying pan on medium-high. Add onion and garlic. Cook for 3 to 5 minutes, stirring often, until onion starts to soften. Add zucchini pulp. Stir. Transfer to medium bowl.

Add remaining 9 ingredients. Stir well. Spoon into zucchini shells. Bake in 375°F (190°C) oven for about 30 minutes until filling is set. Makes 6 stuffed zucchini.
