Cream-Layered Pastries

| Layers of light puff pastry, strawberry jam and whipped cream. Enjoy with a cup of coffee and imagine you are in a Parisian patisserie. | ||||||||||||||||||

Roll out pastry on lightly floured surface to about 9 x 9 inch (22 x 22 cm) square. Place on ungreased baking sheet. Bake in 400°F (205°C) oven for 10 to 12 minutes until golden and puffed. Let baking sheet stand on wire rack to cool. Split pastry in half horizontally into 2 layers. Cut each half into 6 rectangles. Beat whipping cream in small bowl until soft peaks form. Spread 1 tbsp. (15 mL) jam on 1 side of 1 pastry rectangle. Spread 3 tbsp. (50 mL) whipped cream over jam. Top with another pastry rectangle. Spread 1 tbsp. (15 mL) jam over pastry rectangle. Spread 3 tbsp. (50 mL) whipped cream over jam. Top with another pastry rectangle. Repeat with remaining pastry rectangles, jam and whipped cream. Dust with icing sugar. Makes 4 pastries. |
