Cucumber Chutney

Cucumber Chutney      "Cucumber Chutney" is available in PDF format print friendly version

Fruit + curry + cucumber = delicious! The flavours are even more intense the second day. Best served with grilled pork or chicken.
 
Cooking oil1/2 tsp.2 mL
Chopped onion1 cup250 mL
Chopped red pepper1 cup250 mL
 
Chopped dried apricot1/4 cup60 mL
Apple juice1/2 cup125 mL
Dried cranberries1/2 cup125 mL
Curry powder1 tsp.5 mL
Garlic powder1/4 tsp.1 mL
Ground cumin1/4 tsp.1 mL
Salt1/4 tsp.1 mL
Pepper1/8 tsp.0.5 mL
 
Diced peeled English cucumber1 1/3 cups325 mL
 
Heat cooking oil in small saucepan on medium. Add onion and red pepper. Cook for about 5 minutes, stirring often, until onion starts to soften.

Add next 8 ingredients. Stir. Simmer, uncovered, for about 5 minutes until liquid is evaporated. Transfer to small bowl.

Add cucumber. Stir. Makes about 3 cups (750 mL).
