Curried Chicken Rolls

These scrumptious rolls are bursting with flavour. Watch out—they will be gone before you know it!
 
Chili oil1 tsp.5 mL
Boneless, skinless chicken breast halves (about 4), cut lengthwise into long strips1 lb.454 g
Salt1/4 tsp.1 mL
Pepper1/8 tsp.0.5 mL
 
Curry paste (available in Asian section of grocery store)1 tbsp.15 mL
Mango chutney1 tbsp.15 mL
Worcestershire sauce1/4 tsp.1 mL
 
English cucumber (with peel)11
Green onions, thinly sliced lengthwise44
Flour tortillas (10 inch, 25 cm, diameter), warmed in oven44
 
Chopped fresh cilantro (or fresh parsley)2 tbsp.30 mL
 
Heat chili oil in frying pan on medium until hot. Add chicken. Sprinkle with salt and pepper. Stir-fry for about 3 minutes until browned.

Stir in curry paste, chutney and Worcestershire sauce. Cook for 10 minutes, stirring often, until chicken is no longer pink inside.

Slice cucumber in half lengthwise. Slice each half lengthwise into 4 strips. Divide and arrange cucumber, green onion and chicken mixture at bottom end of each tortilla.

Sprinkle with cilantro. Roll up tightly, jelly roll-style. Cut into 1 inch (2.5 cm) slices. Secure with wooden picks. Makes 40 chicken rolls.
