This perfectly risen loaf has a great appearance and texture once sliced. The orange zest creates a wonderful complementary flavour to the dates. Delicious!
 
All-purpose flour2 1/2 cups625 mL
Granulated sugar3/4 cup175 mL
Baking powder1 1/2 tbsp.25 mL
 
Hard margarine (or butter)1/3 cup75 mL
Milk1 cup250 mL
Large eggs, fork-beaten22
Finely grated orange zest1 1/2 tsp.7 mL
 
Chopped pitted dates1 cup250 mL
 
Combine flour, sugar and baking powder in large bowl. Make a well in centre.

Melt margarine in small saucepan on medium. Remove from heat. Stir in milk. Add eggs and zest. Stir. Add to well.

Add dates. Stir until combined. Turn into greased 9 x 5 x 3 inch (22 x 12.5 x 7.5 cm) loaf pan. Bake in 350°F (175°C) oven for 55 to 60 minutes until wooden pick inserted in centre comes out clean. Let stand in pan for 10 minutes before removing to wire rack to cool. Cuts into 16 slices.
