Favourite Fruitcake

A fruitcake that’s sure to please everyone, this one’s not too dark and not too light. Make and freeze these cakes a few weeks ahead and you’ll have more time to spend with your friends and family during the holidays.
 
Golden raisins1 lb.454 g
Chopped glazed pineapple3/4 lb.340 g
Red glazed cherries3/4 lb.340 g
Diced mixed peel1/2 lb.225 g
Pecan halves4 oz.113 g
Whole blanched almonds, halved4 oz.113 g
All-purpose flour1/2 cup125 mL
 
Butter (or hard margarine), softened1 cup250 mL
Brown sugar, packed2 cups500 mL
Large eggs44
 
All-purpose flour2 1/2 cups625 mL
Baking powder1 tsp.5 mL
Ground cinnamon1 tsp.5 mL
Salt1 tsp.5 mL
 
Instant coffee granules1 tbsp.15 mL
Hot water1 tbsp.15 mL
Apple jelly1/2 cup125 mL
Milk1/2 cup125 mL
Vanilla extract1 tsp.5 mL
 
Line two 9 x 5 x 3 inch (22 x 12.5 x 7.5 cm) loaf pans with greased foil. Set aside. Stir first 7 ingredients in extra-large bowl until coated with flour. Set aside.

Cream butter and brown sugar in large bowl. Add eggs, 1 at a time, beating well after each addition.

Combine next 4 ingredients in small bowl.

Combine coffee granules and hot water in separate small bowl. Add remaining 3 ingredients. Stir. Add flour mixture to butter mixture in 3 additions, alternating with coffee mixture in 2 additions, stirring well after each addition until just combined. Spread in prepared pans. Bake in 300°F (150°C) oven for about 2 1/2 hours until wooden pick inserted in centre comes out clean. Let stand in pan on wire rack until completely cooled. Makes 2 fruitcakes, about 3 1/4 lbs. (1.5 kg) each. Each cake cuts into 16 slices, for a total of 32 slices.
