Flower Cupcakes

Small cakes with dainty marshmallow flowers. Pink and pretty.
 
Package of yellow cake mix (1 layer size), or your child's favourite flavour11
 
ICING
Icing (confectioner's) sugar1 1/2 cups375 mL
Hard margarine (or butter), melted2 tbsp.30 mL
Milk1 tbsp.15 mL
Drop of red liquid food colouring11
 
Small white (or coloured) marshmallows1 cup250 mL
Silver dragées (tiny candy balls)3 tbsp.50 mL
 
Prepare cake mix according to package directions. Grease muffin cups with cooking spray or line with pink and/or white paper liners. Fill cups 2/3 full. Bake in 350°F (175°C) oven for 15 to 20 minutes until wooden pick inserted in centre of cupcake comes out clean. Let stand in pan for 10 minutes before removing to wire rack to cool.

Icing: Combine first 4 ingredients in small bowl. Stir, adding up to 1 tbsp. (15 mL) more milk if necessary, until spreadable consistency. Makes about 3/4 cup (175 mL) icing. Ice top of each cupcake.

Cut marshmallows horizontally in half. Pinch ends to create petal shape. Arrange 6 marshmallow pieces in flower pattern on icing. Place silver dragées in centre of each flower. Makes12 cupcakes.
