German Potato Salad

German Potato Salad      "German Potato Salad" is available in PDF format print friendly version

Served warm, this salad is scrumptious with lots of bacon and onion. Garnish with chopped green onion and carrot zest.
 
Waxy potatoes (about 4 medium), peeled2 lbs.900 g
and quartered
Water
 
Salt3/4 tsp.4 mL
Pepper1/8 tsp.0.5 mL
 
Bacon slices, diced66
Chopped onion1 cup250 mL
 
Granulated sugar1 1/2 tbsp. 25 mL
All-purpose flour1 tbsp.15 mL
Dry mustard1/2 tsp.2 mL
Salt1/8 tsp.0.5 mL
 
Milk1/2 cup125 mL
White vinegar1 1/2 tbsp. 25 mL
 
Cook potato in water in large saucepan until tender. Drain. Cool enough to handle. Cut into small cubes or dice.

Add first amount of salt and pepper. Toss together well. Cover to keep warm.

Sauté bacon in frying pan for 3 to 4 minutes. Add onion and fry until onion is golden. Drain. Stir into potato. Cover to keep warm.

Mix sugar, flour, mustard and second amount of salt in small saucepan.

Stir in milk and vinegar until smooth. Heat and stir until boiling and thickened. Pour over potato mixture. Toss gently to coat. Makes 4 cups (1 L).
