Grilled Mixed Veggies

Combine the goodness of vegetables with smoky barbecue flavour. Delicious!
 
Medium zucchini (with peel), cut into33
1/4 inch (6 mm) slices
Small red pepper, seeds and ribs11
removed, cut into 1 inch (2.5 cm)

Small yellow pepper, seeds and ribs11
removed, cut into 1 inch (2.5 cm)
pieces
Halved fresh white mushrooms1 cup250 mL
Sliced red onion1/2 cup125 mL
Olive (or cooking) oil4 tsp.20 mL
Dried whole oregano2 tsp.10 mL
Lemon juice1 tsp.5 mL
No-salt seasoning (such as Mrs. Dash)1 tsp.5 mL
Pepper1/2 tsp.2 mL
 
Preheat gas barbecue to medium. Combine all 10 ingredients in large bowl. Transfer to barbecue basket. Place basket on grill. Cook for 25 to 30 minutes, turning basket occasionally, until vegetables are tender-crisp. Serves 4.
