Hickory, dickory, dock...it's almost six o' clock! Do you know what you're making for dinner? This is it—refreshing, sweet mango and grilled pork tenderloin.
 
Pork tenderloin, trimmed of fat1 lb.454 g
Chili powder1 tsp.5 mL
 
Hickory barbecue sauce1/4 cup60 mL
 
Cut or torn romaine lettuce, 8 cups2 L
lightly packed
Can of sliced mango in syrup,14 oz.398 mL
drained and chopped
Thinly sliced red pepper1 cup250 mL
 
SWEET 'N' SPICY DRESSING
Italian (or ranch) dressing1/2 cup125 mL
Lime (or orange) juice2 tbsp.30 mL
Liquid honey2 tbsp.30 mL
Chili powder1/2 tsp.2 mL
 
Sprinkle all sides of tenderloin with chili powder. Preheat gas barbecue to medium. Place tenderloin on 1 side of greased grill. Turn off burner under tenderloin, leaving opposite burner on medium. Close lid. Cook for 25 minutes, turning occasionally.

Brush tenderloin with barbecue sauce. Cook for another 4 to 5 minutes until meat thermometer inserted into thickest part of tenderloin reads 155°F (68°C). Remove to cutting board. Cover with foil. Let stand for 10 minutes. Cut into 12 slices.

Layer next 3 ingredients on 4 large plates. Top with pork.

Sweet 'N' Spicy Dressing: Combine all 4 ingredients in small bowl. Makes about 3/4 cup (175 mL) dressing. Drizzle over salads. Serves 4.
