Grilled Tilapia in Banana Leaf

Aromatic grilled Tilapia fillets infused with the fragrance of Banana leaves, herbs and spices.
 
Lemon grass paste 2 tbsp. 30 mL
Lime juice 2 tbsp. 30 mL
Brown sugar, packed 1 tbsp.15 mL
Sambal belacan 1 tbsp.15 mL
Salt 1 tsp. 5 mL
Garlic cloves, minced 3 3
 
Banana leaf 1 1
Tilapia fillets (4 – 5 oz., 113 – 140 g, each) 4 4
 
Sliced fresh Thai basil 1 tbsp. 15 mL
Finely sliced small red chili pepper 1 tbsp.15 mL

Combine first 6 ingredients.

Place a large sheet of aluminum foil on work surface. Lay banana leaf, shiny side down, on foil. Arrange fillets in centre of leaf and spread lemon grass mixture over fillets (see How To, page 215). Bring up sides of leaf and fold over to enclose. Wrap tightly in foil.

Cook fish on an ungreased grill on medium for 10 minutes until fish flakes easily when tested with a fork. Remove foil and transfer fish in banana leaf to a serving platter.

Sprinkle fillets with basil and chili pepper. Makes 4 fillets.
