Homemade Chocolate Angel Food Cake

This cake does not contain any egg yolks or other fat.
 
All-purpose flour2/3 cup150 mL
Granulated sugar1/4 cup60 mL
Cocoa1/3 cup75 mL
 
Egg whites, large (or 1 1/2 cups, 375 mL,1212
egg white product such as Simply
Egg Whites)
Cream of tartar1 tsp.5 mL
Vanilla1 tsp.5 mL
Salt, sprinkle
Granulated sugar1 cup250 mL
 
Sift flour, first amount of sugar and cocoa together twice into medium bowl. Set aside.

Beat egg whites with cream of tartar, vanilla and salt until foamy. Gradually beat in second amount of sugar until stiff peaks form. Sift 1/4 flour mixture over egg white mixture. Fold in gently just until flour mixture disappears. Repeat 3 more times. Pour into ungreased 10 inch (25 cm) tube pan. Run knife through batter to remove any air pockets. Bake in 350°F (175°C) oven for 50 minutes until cake springs back when gently touched. Invert pan onto counter to cool. Serves 12.
