Layered Ice Cream Cake

This colourful dessert is a joy to behold and to eat! Adults and kids will love it.
 
Vanilla ice cream, softened2 1/2 cups625 mL
Red glazed cherries, chopped1/4 cup60 mL
Chopped glazed pineapple1/2 cup125 mL
Slivered almonds, toasted 1/4 cup60 mL
 
Semi-sweet chocolate baking 33
squares (1 oz., 28 g, each),
grated
Vanilla ice cream, softened3 cups750 mL
Cocoa, sifted if lumpy1/4 cup60 mL
 
Whipping cream1 1/2 cups375 mL
Icing (confectioner's) sugar1/3 cup75 mL
 
Crushed coconut cookies (such1 cup250 mL
as Dad's), about 10 cookies
Vanilla1 tsp.5 mL
 
GARNISH
Chopped red and green glazed 1/4 cup60 mL
cherries
Chopped glazed pineapple2 tbsp.30 mL
Sliced almonds, toasted 2 tbsp.30 mL
 
Line bottom and side of 8 inch (20 cm) springform pan with parchment (or waxed) paper. Combine first 4 ingredients in large bowl. Spread evenly in prepared pan. Freeze for 1 to 2 hours until almost firm.

Combine next 3 ingredients in same large bowl. Spread evenly over ice cream mixture. Freeze for 2 to 3 hours until almost firm.

Beat whipping cream in small bowl until soft peaks form. Add icing sugar. Beat well.

Add cookies and vanilla. Mix well. Spread evenly over chocolate mixture. Freeze for at least 8 hours or overnight until firm.

Garnish: Sprinkle top with cherries, pineapple and almonds. Cut with hot knife. Serves 10 to 12.
