Line bottom and side of 8 inch (20 cm) springform pan with parchment (or waxed) paper. Combine first 4 ingredients in large bowl. Spread evenly in prepared pan. Freeze for 1 to 2 hours until almost firm. Combine next 3 ingredients in same large bowl. Spread evenly over ice cream mixture. Freeze for 2 to 3 hours until almost firm. Beat whipping cream in small bowl until soft peaks form. Add icing sugar. Beat well. Add cookies and vanilla. Mix well. Spread evenly over chocolate mixture. Freeze for at least 8 hours or overnight until firm. Garnish: Sprinkle top with cherries, pineapple and almonds. Cut with hot knife. Serves 10 to 12. |
