Main Macaroni Salad

Tried and true—the perfect side for a picnic or barbecue.
 
Elbow macaroni2 cups500 mL
Boiling water8 cups2 L
Salt1 tsp.5 mL
 
Chopped celery3/4 cup175 mL
Sweet pickle relish2 tbsp.30 mL
Grated onion (or chopped green onion)2 tbsp.30 mL
Large hard-cooked eggs, chopped22
(optional)
 
Salad dressing (or mayonnaise)3/4 cup175 mL
Salt1 tsp.5 mL
Pepper1/4 tsp.1 mL
 
Radish slices, for garnish
 
Cook macaroni in boiling water and first amount of salt in large uncovered pot or Dutch oven for 8 to 10 minutes, stirring occasionally, until tender but firm. Drain. Rinse with cold water. Drain well. Transfer to large bowl.

Add next 4 ingredients. Stir.

Combine salad dressing, second amount of salt and pepper in small bowl. Add to macaroni mixture. Stir well. Chill until cold.

Garnish with radish slices. Serves 6.
