These small pie tarts remind us of the individual dessert pies served in the best restaurants.
 
Pastry for 2 crust 9 inch (22 cm) pie,
your own or a mix
 
Large eggs22
 
Can of pure pumpkin (not pie filling)14 oz.398 mL
Evaporated milk1 1/3 cups325 mL
Granulated sugar1/2 cup125 mL
Brown sugar, packed1/4 cup60 mL
Ground cinnamon1 tsp.5 mL
Ground ginger1/2 tsp.2 mL
Ground cloves1/4 tsp.1 mL
 
Roll out pastry to 1/8 inch (3 mm) thickness. Cut sixteen 4 inch (10 cm) circles from pastry. Line ungreased muffin cups with pastry circles. Cover with plastic wrap. Chill for 30 minutes.

Whisk eggs in large bowl for about 2 minutes until frothy.

Add remaining 7 ingredients. Beat until smooth. Divide pumpkin mixture among pastry shells. Bake in 375°F (190°C) oven for about 40 minutes until wooden pick inserted in centre comes out clean. Cool in pan for 10 minutes. Remove to wire rack. Makes 16 individual pies.
