Mini-Pumpkin Pies

Roll out pastry to 1/8 inch (3 mm) thickness. Cut sixteen 4 inch (10 cm) circles from pastry. Line ungreased muffin cups with pastry circles. Cover with plastic wrap. Chill for 30 minutes. Whisk eggs in large bowl for about 2 minutes until frothy. Add remaining 7 ingredients. Beat until smooth. Divide pumpkin mixture among pastry shells. Bake in 375°F (190°C) oven for about 40 minutes until wooden pick inserted in centre comes out clean. Cool in pan for 10 minutes. Remove to wire rack. Makes 16 individual pies. |
