The perfect blend of flavours—chocolate, hazelnut and coffee go so well together! A hint of allspice rounds out the flavours.
 
All-purpose flour2 cups500 mL
Brown sugar, packed1 cup250 mL
Cocoa, sifted if lumpy1 tbsp.15 mL
Instant coffee granules,1 tbsp.15 mL
crushed to fine powder
Baking powder2 tsp.10 mL
Baking soda1/2 tsp.2 mL
Ground allspice1/2 tsp.2 mL
Salt1/2 tsp.2 mL
 
Chocolate milk1 cup250 mL
Butter (or hard margarine), melted1/4 cup60 mL
Large eggs22
 
Flaked hazelnuts (filberts)1/2 cup125 mL
 
Flaked hazelnuts (filberts)2 tbsp.30 mL
 
Measure first 8 ingredients into large bowl. Stir. Make a well in centre.

Combine next 3 ingredients in medium bowl. Add to well.

Add first amount of hazelnuts. Stir until just moistened. Fill 12 greased muffin cups 3/4 full.

Sprinkle with second amount of hazelnuts. Bake in 375°F (190°C) oven for 18 to 20 minutes until wooden pick inserted in centre of muffin comes out clean. Let stand in pan for 5 minutes before removing to wire rack to cool. Makes 12 muffins.
