Spicy dishes don’t have to be overpowering. In this citrusy quinoa, spicy chili paste blends perfectly with the flavours of soy, maple and orange for a nicely warming heat.
 
Frozen concentrated orange juice, thawed1/4 cup60 mL
Rice vinegar2 tbsp.30 mL
Low-sodium soy sauce1 tbsp.15 mL
Maple (or maple-flavoured) syrup1 tbsp.15 mL
Chili paste (sambal oelek)1/2 tsp.2 mL
Garlic powder1/2 tsp.2 mL
Ground ginger1/2 tsp.2 mL
 
Cooked quinoa3 cups750 mL
Diced red pepper1 cup250 mL
Diced yellow pepper1 cup250 mL
Diced zucchini (with peel)1 cup250 mL
 
Whisk first 7 ingredients in medium bowl until combined.

Add remaining 4 ingredients. Toss. Makes about 6 cups (1.5 L). Serves 6.
