Peachy-Keen Crepe

If you’re keen on crepes but a little afraid to make them, try these effort-free crepes that bake in your oven. Watch the crepe reach great heights as it bakes (it’ll deflate when it’s out of the oven). It’s just peachy!
 
Large eggs22
Milk1/2 cup125 mL
Butter (or hard margarine), melted2 tbsp.30 mL
 
All-purpose flour1/2 cup125 mL
Salt1/4 tsp.1 mL
 
Can of sliced peaches in syrup, drained 14 oz.398 mL
Maple (or maple-flavoured) syrup1/3 cup75 mL
 
Preheat oven to 450°F (230°C). Place 9 x 9 inch (22 x 22 cm) pan in oven. Whisk first 3 ingredients in medium bowl.

Add flour and salt. Beat until smooth. Spray hot pan with cooking spray. Pour batter into pan. Bake for about 12 minutes until edges are browned and middle is puffed up.

Meanwhile, combine peaches and syrup in small bowl. Cut crepe into 4 equal portions. Spoon peach mixture over top. Serves 4.
