Peachy-Keen Crepe

Preheat oven to 450°F (230°C). Place 9 x 9 inch (22 x 22 cm) pan in oven. Whisk first 3 ingredients in medium bowl. Add flour and salt. Beat until smooth. Spray hot pan with cooking spray. Pour batter into pan. Bake for about 12 minutes until edges are browned and middle is puffed up. Meanwhile, combine peaches and syrup in small bowl. Cut crepe into 4 equal portions. Spoon peach mixture over top. Serves 4. |
