Pita Steak Sandwiches

Tender beef and refreshing homemade salsa top warm pitas for a unique open-faced sandwich. Greek-style pita breads work best because they’re a little sturdier than other varieties, which helps to hold all the filling.
 
Beef top sirloin steak, trimmed of fat1/2 lb.225 g
Salt1/8 tsp.0.5 mL
Pepper1/8 tsp.0.5 mL
 
TOMATO CORN SALSA
Chopped fresh tomato1/2 cup125 mL
Frozen kernel corn, thawed1/4 cup60 mL
Chopped fresh cilantro or parsley1 tsp.5 mL
(or 1/4 tsp., 1 mL, dried)
Olive (or cooking) oil1 tsp.5 mL
Red wine vinegar1 tsp.5 mL
Chili powder1/4 tsp.1 mL
Ground cumin1/4 tsp.1 mL
Salt1/8 tsp.0.5 mL
 
Greek-style pita breads, warmed22
 
Put steak on greased broiler pan. Sprinkle with salt and pepper. Broil on top rack in oven for about 3 minutes per side or until beef reaches desired doneness. Cover with foil. Let stand for 10 minutes. Cut diagonally, across the grain, into thin slices.

Tomato Corn Salsa: Combine next 8 ingredients in small bowl. Makes about 2/3 cup (150 mL) salsa.

Put pitas on 2 plates. Arrange steak over top. Top with Tomato Corn Salsa. Serves 2.
