Hungry for quiche but not the extra calories? This easy-to-make tart will nicely fill the niche. Wild rice, asparagus and tangy blue cheese make this dish a flavour sensation.
 
Canola oil1 tsp.5 mL
Fresh asparagus tips (3 inch, 7.5 cm, length)1212
Chopped fresh asparagus1 cup250 mL
 
Cooked wild rice1 cup250 mL
Grated mozzarella cheese3/4 cup175 mL
Crumbled blue cheese1/4 cup60 mL
 
Large eggs, fork-beaten33
Milk1 1/3 cups325 mL
Chopped fresh parsley (or 2 1/4 tsp., 11 mL, flakes)3 tbsp.50 mL
 
Whole wheat flour3/4 cup175 mL
Baking powder1 tsp.5 mL
Salt1/4 tsp.1 mL
Pepper1/4 tsp.1 mL
 
Heat canola oil in medium frying pan on medium. Add asparagus tips and chopped asparagus. Cook, covered, for 1 to 2 minutes until bright green. Remove tips to plate. Set aside.

Add rice to frying pan. Stir. Spread evenly in greased 9 inch (22 cm) deep dish pie plate. Sprinkle both cheeses over top.

Combine next 3 ingredients in large bowl.

Combine remaining 4 ingredients in small bowl. Add to egg mixture. Stir well. Pour over asparagus mixture. Arrange asparagus tips in spoke pattern over egg mixture. Bake, uncovered, in 400°F (205°C) oven for about 35 minutes until golden and knife inserted in centre comes out clean. Let stand for 5 minutes. Cuts into 6 wedges.
