Get It Together: liquid measures, grater, dry measures, measuring spoons, mini-muffin pan, cooking spray, small bowl, fork, spoon, wooden toothpick, oven mitts, wire rack, table knife, plate
 
Large eggs22
Grated jalapeño Monterey 1/2 cup125 mL
Jack cheese
Chunky salsa1/4 cup60 mL
Crushed Ritz crackers 1/4 cup60 mL
(about 8 crackers)
Chili powder1/2 tsp.2 mL
 
Place oven rack in centre position. Turn oven on to 425°F (220°C). Grease muffin cups with cooking spray. Break eggs into bowl. Beat eggs a little with fork. Add remaining 4 ingredients. Mix well. Spoon about 1 1/2 tbsp. (25 mL) cheese mixture into each muffin cup. Bake for 8 to 10 minutes until toothpick inserted straight down into centre of a bite comes out clean. Put pan on wire rack. Turn oven off. Let cool for 2 minutes. Run knife around inside edge of muffin cups to loosen bites. Transfer to plate. Makes 12 bites.

Tip: Store bites in resealable sandwich bags in sets of 3 in the refrigerator for up to 5 days. Eat cold or reheat in the microwave on high (100%) for about 15 seconds until hot.
