Smoked Salmon Sauce

Luxurious smoked salmon lends its rich flavour to this light and luscious sauce. Serve over angel hair pasta for a sure-fire hit with any seafood lover.
 
Butter (or hard margarine)1 tbsp.15 mL
Finely chopped green onion 3 tbsp.50 mL
 
Can of 2% evaporated milk13 1/2 oz.385 mL
Dry (or alcohol-free) white wine1/3 cup75 mL
 
Prepared chicken broth1/2 cup125 mL
Cornstarch2 tsp.10 mL
 
Smoked salmon, cut into thin strips4 oz. 113 g
Chopped fresh dill1 tbsp.15 mL
Lemon juice1 tsp.5 mL
 
Heat butter in large frying pan on medium. Add green onion. Cook for about 3 minutes, stirring occasionally, until softened.

Add milk and wine. Stir. Bring to a boil. Boil gently for 5 minutes.

Stir broth into cornstarch in small cup. Add to wine mixture. Heat and stir for about 1 minute until boiling and thickened.

Add remaining 3 ingredients. Heat and stir for about 2 minutes until salmon is heated through. Serve immediately. Makes about 2 1/2 cups (625 mL).
