Spinach Grape Salad

Ordinary spinach salad gets a helping hand from some of your favourite summertime fruits. This sweet and colourful salad gets a little crunch from sunflower seeds and poppy seeds for something truly special.
 
Fresh spinach leaves, lightly packed 4 cups 1 L
 
Sliced fresh strawberries 1 cup 250 mL
Seedless green grapes, halved 1/2 cup 125 mL
Seedless red grapes, halved 1/2 cup 125 mL
Sunflower seeds, toasted1/4 cup 60 mL
 
POPPY SEED DRESSING
Balsamic vinegar 2 tbsp. 30 mL
Peanut (or cooking) oil 2 tbsp. 30 mL
Maple (or maple-flavoured) syrup 1 tbsp. 15 mL
Poppy seeds 1 tbsp. 15 mL
Salt 1/4 tsp. 1 mL
 
Arrange spinach on 4 salad plates.

Top with next 4 ingredients.

Poppy Seed Dressing: Combine all 5 ingredients in jar with tight-fitting lid. Shake well. Makes about 1/3 cup (75 mL) dressing. Drizzle over spinach mixture. Serves 4.
