Stuffed Baked Potatoes

Arrive home to hot baked potatoes. Prepare stuffing while oven heats.
 
Medium baking potatoes66
Water2 tbsp.30 mL
 
STUFFING
Light cream cheese, softened4 oz.125 g
Non-fat sour cream2/3 cup150 mL
Onion salt1 1/2 tsp.7 mL
Chopped chives1 tbsp.15 mL
Salt1/2 tsp.2 mL
Pepper1/8 tsp.0.5 mL
 
Grated medium Cheddar cheese1/3 cup75 mL
Paprika, sprinkle
 
Arrange potatoes in 3 1/2 quart (3.5 L) slow cooker, stacking if necessary. Add water. Cover. Cook on Low for 8 to 10 hours.

Stuffing: Mash first 6 ingredients together in bowl. Cut lengthwise slice from top of each potato. Scoop hot potato into same bowl leaving shells intact. Mash well. Spoon back into shells.

Sprinkle with cheese and paprika. Arrange in single layer in 9 x 13 inch (22 x 33 cm) baking pan. Bake in 425°F (220°C) oven for about 15 minutes until hot. Makes 6 stuffed potatoes.
