Heat cooking oil in large frying pan on medium. Add next 3 ingredients. Heat and stir for 1 to 2 minutes until fragrant. Add next 4 ingredients. Heat and stir for about 3 minutes until shrimp turns pink. Remove from heat. Add next 3 ingredients. Stir. Transfer to medium bowl. Chill for about 1 hour until cold. Press lettuce leaves into 12 small wine glasses (see Note). Spoon shrimp mixture on top of lettuce. Makes 12 shrimp cocktails. |
