Thai Shrimp Cocktails

The exotic Thai flavours of curry, sweet chili and lime liven up a cocktail party classic.
 
Cooking oil1 tbsp.15 mL
Garlic cloves, minced 22
(or 1/2 tsp., 2 mL, powder)
Finely grated gingerroot 1 tsp.5 mL
Red curry paste1 tsp. 5 mL
 
Bags of frozen uncooked 22
shrimp (12 oz., 340 g, each),
peeled and deveined,
thawed, coarsely chopped
Sweet chili sauce2 tbsp.30 mL
Lime juice2 tbsp.30 mL
Fish sauce (or low-sodium 1 tbsp.15 mL
soy sauce)
 
Fresh bean sprouts1 cup250 mL
Coarsely chopped 1/2 cup125 mL
unsalted peanuts
Coarsely chopped fresh cilantro 1/4 cup60 mL
or parsley
 
Small butter lettuce leaves2424
 
Heat cooking oil in large frying pan on medium. Add next 3 ingredients. Heat and stir for 1 to 2 minutes until fragrant.

Add next 4 ingredients. Heat and stir for about 3 minutes until shrimp turns pink. Remove from heat.

Add next 3 ingredients. Stir. Transfer to medium bowl. Chill for about 1 hour until cold.

Press lettuce leaves into 12 small wine glasses (see Note). Spoon shrimp mixture on top of lettuce. Makes 12 shrimp cocktails.

Note: For easy cleanup, use small disposable stemware.

Make Ahead: Prepare the shrimp mixture and store it in an airtight container in the refrigerator for up to 24 hours. The shrimp cocktails may be assembled up to 8 hours before serving, covered and chilled.
