Thai-Style Pork Soup

Heat cooking oil in large pot or Dutch oven on medium-high. Add pork. Cook for about 5 minutes, stirring occasionally, until browned. Transfer to small bowl. Cover to keep warm. Heat and stir curry paste in same large pot on medium for about 1 minute until fragrant. Add next 5 ingredients. Stir. Bring to a boil on medium-high. Reduce heat to medium-low. Cover. Simmer for about 5 minutes until red pepper is softened. Add pork and spinach. Stir. Simmer for about 2 minutes, stirring occasionally, until pork is heated through and spinach is wilted. Add basil and lime juice. Stir. Serves 4. |
