Thai-Style Pork Soup

Spicy curry heats up this hearty soup. A great starter for an Asian meal.
 
Cooking oil1 tbsp.15 mL
Pork tenderloin, trimmed of fat and cut1/2 lb.225 g
into thin strips
 
Red curry paste1 tbsp.15 mL
 
Low-sodium prepared chicken broth4 cups1 L
Can of cut baby corn, drained14 oz.398 mL
Thinly sliced red pepper1 cup250 mL
Fish sauce1 tsp.5 mL
Brown sugar, packed1 tsp.5 mL
 
Fresh spinach, stems removed, lightly2 cups500 mL
packed
 
Finely shredded basil (or 1 1/2 tsp.,2 tbsp.30 mL
7 mL, dried)
Lime juice1 tbsp.15 mL
 
Heat cooking oil in large pot or Dutch oven on medium-high. Add pork. Cook for about 5 minutes, stirring occasionally, until browned. Transfer to small bowl. Cover to keep warm.

Heat and stir curry paste in same large pot on medium for about 1 minute until fragrant.

Add next 5 ingredients. Stir. Bring to a boil on medium-high. Reduce heat to medium-low. Cover. Simmer for about 5 minutes until red pepper is softened.

Add pork and spinach. Stir. Simmer for about 2 minutes, stirring occasionally, until pork is heated through and spinach is wilted.

Add basil and lime juice. Stir. Serves 4.
