Tuna, Leek And Rice

A good dish with a mild fish flavor.
 
White wine (or apple juice)1/4 cup60 mL
Hard margarine (or butter)1/4 cup60 mL
Ground rosemary1 tsp.5 mL
Salt1/2 tsp.2 mL
Pepper1/8 tsp.0.5 mL
 
Cooking oil1 tbsp.15 mL
Tuna fillet, cut into short thin fingers3/4 lb.340 g
Slivered or chopped leeks (white part only)1 cup250 mL
 
Dark romaine lettuce leaves, sliced1 cup250 mL
and packed
Instant rice1 1/2 cups375 mL
Boiling water1 1/2 cups375 mL
 
Measure first 5 ingredients into small bowl. Stir. Set aside.

Heat wok or frying pan on medium-high. Add cooking oil. Add fish and leeks. Stir-fry for about 2 minutes until fish is opaque.

Add lettuce, rice and boiling water. Cover. Simmer until water is absorbed. Add wine mixture. Stir until heated through. Serves 4.
