Turkey Pies

A lovely golden crust encases chunks of turkey and vegetables in a flavourful gravy. This recipe uses several leftovers from a turkey dinner. These pies may be frozen and reheated.
 
TURKEY FILLING
Leftover turkey gravy, mashed with fork1 3/4 cups425 mL
Poultry seasoning1/8 tsp.0.5 mL
Dry onion flakes2 tsp.10 mL
Salt1/4 tsp.1 mL
Pepper1/8 tsp.0.5 mL
Prepared turkey (or chicken) broth1/4 cup60 mL
 
Diced leftover cooked turkey (about 16 oz., 454 g)2 2/3 cups650 mL
Leftover cooked vegetables (or cooked mixed vegetables), chopped1 cup 250 mL
Jar of pimiento, drained and chopped 2 oz.57 g
 
Pastry for 4 crusts, your own or a mix
 
Large egg, fork-beaten11
 
Turkey Filling: Mix first 5 ingredients in medium bowl. Add broth, 1 tbsp. (15 mL) at a time, stirring constantly, until medium-thin consistency.

Add turkey, vegetables and pimiento. Stir well. Makes about 4 cups (1 L) filling.

Divide 2/3 of pastry into 6 portions. Roll out on lightly floured surface to 1/8 inch (3 mm) thickness. Carefully lift pastry circles and press into bottom and up sides of six 4 3/8 inch (11 cm) foil pot pie pans. Divide and spoon filling into shells, using about 2/3 cup (150 mL) for each.

Divide remaining 1/3 of pastry into 6 portions. Roll out on lightly floured surface to 1/8 inch (3 mm) thickness. Lightly brush exposed edge of bottom shells with some egg. Cover with remaining pastry circles. Trim and crimp edges to seal. Brush tops with remaining egg. Cut 3 or 4 small slits in each top to allow steam to escape. Place on baking sheet. Bake on bottom rack in 400°F (205°C) oven for about 30 minutes until browned. Makes 6 pies.
