Turkey Vegetable Meatloaf

Have you ever seen a pretty meatloaf? Now you have! Excellent cold in a sandwich.
 
Medium carrot, cut into chunks 11
Medium red pepper, cut into chunks11
Green onions, halved 22
Celery rib, cut into chunks11
Garlic clove (optional)11
Skim evaporated milk1/2 cup125 mL
Egg whites (large)33
 
Fine dry whole wheat (or white) 1 1/2 cups375 mL
bread crumbs
Seasoned salt1 tsp.5 mL
Pepper1/4 tsp.1 mL
Worcestershire sauce1 tsp.5 mL
Lean ground turkey breast1 1/4 lbs.560 g
 
Can of stewed tomatoes, with juice14 oz.398 mL
 
Chopped fresh parsley, for garnish
Red pepper slices, for garnish
 
Process first 7 ingredients in food processor or blender until finely chopped. Pour into large bowl.

Add next 5 ingredients. Mix very well. Form into two 8 x 5 inch (20 x 12.5 cm) loaves. Place crosswise in greased or foil-lined 9 x 13 inch (22 x 33 cm) pan.

Process tomatoes with juice until almost puréed. Pour over meatloaves. Bake, uncovered, in 325°F (160°C) oven for 1 1/2 hours. Makes 2 loaves.

Garnish with parsley and red pepper. Serves 8.
