Turtle Pie

A lavish indulgence of caramel, chocolate and nuts. Despite the name, this pie disappears fast.
 
FILLING
Box of chocolate pudding powder11
(not instant), 6-serving size
Milk2 cups500 mL
 
Thick caramel (or butterscotch) 1/3 cup75 mL
ice cream topping
Graham cracker crust11
Chopped pecans2/3 cup150 mL
 
TOPPING
Frozen whipped topping, thawed1 1/2 cups375 mL
Thick caramel (or butterscotch)2 tbsp.30 mL
ice cream topping
Chopped pecans2 tbsp.30 mL
 
Filling: Combine pudding powder and milk in medium saucepan. Heat and stir on medium for about 10 minutes until boiling and thickened. Remove from heat. Let stand at room temperature for 20 minutes, stirring often until cooled slightly.

Spread ice cream topping in bottom of crust. Sprinkle with pecans. Spread pudding over pecans. Cover with plastic wrap directly on surface to prevent skin from forming. Chill for about 1 1/2 hours until set. Remove plastic wrap.

Topping: Spread whipped topping over filling. Drizzle with ice cream topping. Sprinkle with pecans. Cuts into 8 wedges.
