Yakitori

Plan ahead to grill these for old friends in the late afternoon of a hot summer’s day. So quick, you won’t miss a moment’s conversation.
 
Mirin (Japanese sweet cooking seasoning)1/4 cup60 mL
Thick teriyaki basting sauce1/4 cup60 mL
Chili paste (sambal oelek)1 1/2 tsp.7 mL
Garlic powder1/8 tsp.0.5 mL

Boneless, skinless chicken thighs1 lb.454 g

Bamboo skewers (8 inches, 20 cm, each),88
soaked in water for 10 minutes

Sesame seeds, toasted 1 tsp.5 mL
 

Combine first 4 ingredients in small bowl.

Place chicken between 2 sheets of plastic wrap. Pound with mallet or rolling pin until flattened. Cut in half lengthwise. Place in medium bowl. Add 1/4 cup (60 mL) mirin mixture. Turn until coated. Marinate, covered, in refrigerator for 30 minutes.

Thread chicken, accordion-style, onto skewers. Preheat barbecue to high. Place skewers on greased grill. Cook for about 2 minutes per side, brushing with remaining mirin mixture, until no longer pink inside.

Sprinkle with sesame seeds. Makes 8 skewers.
