Zucchini Patties

Use up all the zucchini in your garden making these.
 
Grated zucchini, with peel3 cups750 mL
Finely chopped onion1/4 cup60 mL
Sun-dried tomato halves, softened in55
boiling water for 10 minutes, chopped
Egg whites (large), fork-beaten22
Dry fine bread crumbs2/3 cup150 mL
Low-fat salad dressing (or mayonnaise)1 tbsp.15 mL
Whole wheat flour2 tbsp.30 mL
Garlic clove, minced11
Dried oregano1/8 tsp.0.5 mL
Dried sweet basil1/8 tsp.0.5 mL
Salt1/2 tsp.2 mL
Pepper1/8 tsp.0.5 mL
 
Combine all 12 ingredients in large bowl. Mix well to moisten bread crumbs. Form into patties, using 1/4 cup (60 mL) for each. Heat lightly greased non-stick skillet until hot. Cook patties for 3 to 4 minutes per side until crisp and golden. Makes 12 patties.
