Breakfast Tiramisu
Hot strong prepared coffee 1/2 cup (125 mL)
Brown sugar, packed 2 tbsp. (30 mL)
Raisin bread slices, toasted and crusts removed 8
Mascarpone (or cream) cheese 1 1/2 cups (375 mL)
Vanilla yogurt 1 1/2 cups (375 mL)
Vanilla extract 1/2 tsp. (2 mL)
Cocoa, sifted if lumpy 1 tbsp. (15 mL)
Stir coffee and brown sugar in small cup until brown sugar is dissolved. Let stand until cool.
Arrange 4 toast slices in single layer in 8 x 8 inch (20 x 20 cm) baking dish, trimming to fit if necessary. Brush with half of coffee mixture.
Combine next 3 ingredients in medium bowl. Spread half over toast slices in pan. Repeat with remaining toast slices, coffee mixture and cheese mixture. Chill, covered, for at least 6 hours or overnight.
Sprinkle with cocoa. Cuts into 9 pieces.
