A Frosty Lime Slice

This brightly coloured dessert is filled with plenty of fresh lime flavour. The perfect choice for a fun and festive summertime celebration.
Boiling water 3/4 cup (175 mL)
Box of lime-flavoured jelly powder (gelatin) 3 oz. (85 g)
Block cream cheese, cut up and softened 8 oz. (250 g)
Can of sweetened condensed milk 11 oz. (300 mL)
Lime juice 1/2 cup (125 mL)
Grated lime zest (see Tip, below) 2 tsp. (10 mL)
Whipping cream 1 cup (250 mL)
Pour boiling water over jelly powder in large heatproof bowl. Stir until dissolved. Chill for about 20 minutes until cool.
Beat cream cheese in medium bowl until smooth. Slowly add condensed milk, beating constantly until combined.
Add lime juice and zest. Beat well. Fold half of cream cheese mixture into jelly mixture. Reserve 1/2 cup (125 mL) jelly mixture in small bowl. Spread remaining jelly mixture evenly in plastic wrap-lined 8 x 8 inch (20 x 20 cm) pan.
Beat whipping cream in large bowl until stiff peaks form. Fold in remaining cream cheese mixture. Spread evenly over jelly mixture in pan. Transfer reserved jelly mixture to small resealable freezer bag with tiny piece snipped off 1 corner. Pipe jelly mixture in decorative pattern over whipped cream mixture. Freeze for at least 6 hours or overnight. Cuts into 16 squares.
Tip: When a recipe calls for grated zest and juice, it’s easier to grate the fruit first, then juice it. Be careful not to grate down to the pith (white part of the peel), which is bitter and best avoided.
